- 1 can (15 oz) chickpeas, drained and rinsed
- 1 small onion, roughly chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon flour (or chickpea flour for gluten-free)
- 2 tablespoons olive oil (for drizzling)
- 1 medium beet, roasted and peeled
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Water to thin the sauce as needed
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, pepper, and flour. Pulse until the mixture is well combined but still slightly chunky.
