- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Vegetable oil for frying
- 1/2 cup plain yogurt
- 1 tablespoon fresh dill, chopped
- Zest and juice of 1 lemon
Instructions
- Prepare the Mixture: In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth. Add the grated zucchini, onion, garlic, flour, egg, cumin, cayenne pepper, salt, and pepper. Mix until well combined.
- Form Fritters: Heat oil in a large skillet over medium heat. Scoop about 1/4 cup of the mixture and form it into a patty. Repeat with the remaining mixture.
- Fry the Fritters: Carefully place the fritters in the hot oil, cooking in batches if necessary. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Drain on paper towels.
- Make the Sauce: In a small bowl, mix together the yogurt, dill, lemon zest, and lemon juice. Season with salt to taste.
- Serve: Enjoy the fritters warm with the lemon-dill yogurt for dipping.
