  • 4 large portobello mushrooms, stems removed
  • 1 cup cooked quinoa
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Mushrooms: Clean the portobello mushrooms with a damp cloth and remove the stems. Place them, gill side up, on a baking sheet.
  3. Sauté Spinach and Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add chopped spinach and cook until wilted. Season with salt, pepper, and red pepper flakes if using.
  4. Mix the Filling: In a bowl, combine cooked quinoa, sautéed spinach and garlic, parsley, and half of the Parmesan cheese. Mix well until combined.
  5. Stuff the Mushrooms: Spoon the filling evenly into each portobello mushroom cap. Top with the remaining Parmesan cheese if desired.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
