  • 9 lasagna noodles
  • 2 cups fresh spinach, chopped
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 cups marinara sauce
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Lasagna Noodles: Boil the lasagna noodles according to package instructions. Drain and set aside.
  3. Prepare the Spinach Filling: In a bowl, combine chopped spinach, ricotta cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well until combined.
  4. Assemble the Lasagna: Spread a thin layer of marinara sauce on the bottom of a greased baking dish. Layer 3 lasagna noodles, half of the spinach filling, a third of the mozzarella, and a layer of marinara sauce. Repeat the layers, finishing with noodles and marinara sauce on top. Sprinkle with remaining mozzarella and Parmesan cheese.
  5. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
